1lbsFresh or Thawed Cod or HalibutMust be a firm white fish
1cup White rice flour
1/2tspsalt
1/4tspPepper
1/4tsp baking powder
1/8tspbaking soda
1/8 tspXanthan gum
1 + 1/4cup Water
Instructions
If you use fresh fish you will get to skip the "thaw the fish" step. If not, and you purchased frozen fish, you must thaw the fish completely.
Plug in fryer and heat to 325 degrees
Using kitchen shears, cut the fish into strips or cubes. Make sure to feel for bones, even if your fish is supposed to be boneless. Remove all skin
Mix all the dry ingredients in bowl, add water and stir creating a batter
Add fish to batter, stir so that all the fish is covered
Depending on the size of fryer, add 5-6 pieces and fry for 10-12 minutes
When cooked, remove from heat and place on a paper towel covered plate. Add more pieces to the fryer until all are cooked and repeat the cooking instructions
