Gluten Free Stuffing

This stuffing recipe won over everyone years ago and one of my first Thanksgiving feasts. It was created because my sister absolutely loves Stove Top stuffing and instead of making stuffing that no one would eat because it was too “fancy”, I decided to make my own version of Stove Top. I really hope you love it.

I would love to say that the bread doesn’t matter but I actually think it might. I have made this a couple of times and every time I make it with a homemade loaf of bread, it comes out way better. I think the point is that you need a sweeter bread. This is not to say that if you use a different brand you will not get great results, but if you can make a homemade loaf you’ll love it even more.

INGREDIENTS

  • 6 cups dried gluten free bread cubed (about 6-8 slices, but if you use the Namaste brand bread mix, you will use the entire loaf)
  • 2 cups Chopped celery
  • ½ cup Chopped onion 
  • 2 cups of Turkey broth
  • ½ cup Earth Balance butter (melted)
  • 1 tbsp Parsley
  • 1 tsp Salt 
  • 1 tsp Rosemary
  • ¼ tsp Sage 
  • ¼ tsp Pepper

INSTRUCTIONS

  • Preheat oven to 350 
  • Cube 6 cups of dried gluten free bread (approx. 6-8 slices or the entire Namaste loaf) and set aside.
  • In a large bowl combine the chopped celery (be sure not to chop it too fine), chopped onion, parsley, sage, rosemary, salt and pepper. 
  • Add melted butter and turkey broth and stir 
  • Add the cubed bread and mix well 
  • Place in a baking dish 
  • Bake covered for 30-35 minutes 
  • Bake uncovered another 5 minutes to give it a little color. Since all ovens vary watch it closely that the edges do not become too crisp.

TIP: It is important to add the bread last so that it does not immediately absorb up all of the moisture and become soggy. 

MAKE AHEAD TIP: If you would like to make this stuffing ahead of time, simply put it all together adding the bread last, or just before baking, and refrigerate until is time to bake it.
