I thought I would take a minute and send you an Easter recipe roundup so that you can have everything you need in one place. Simple right? Well I also want you to know that our kids can have cute little treats just like all the other kids. Don’t stress that your kids will be left out, they won’t.
Also, surviving this journey without getting burnt out, isn’t always about having a million recipes to bake, sometimes it’s about getting creative with the ones you already have.
For instance, I know you may have seen these favorite recipes of mine before, but here are the new and different ways I’ve used them. Because my goal is not to make your life more stressful, it’s to relieve you of stress so that you can enjoy your life and kids more.
Honestly, my baking goes in spurts. For a week or two I bake a lot, then I take a big break. And I’ve learned that it’s OK.
I have added my delicious carrot cake cupcakes to this roundup so make sure you scroll down to the end to get that recipe.
This year, I wanted to see if I could create a new fun tradition with my sugar cookies. So I cut them in egg shapes and then created somewhat of an “egg basket” with them. I colored some coconut shreds in a ziplock bag with a tiny amount food dye and used icing as the glue and handle of the basket. My son wasn’t a huge fan of the coconut, but they were actually a fun treat to eat. Here is how they turned out.
Here are a few ways I have decorated my sugar cookies in the past.

Then I put a little decorative twist on my cupcakes. You have to be comfortable using the Wilton color spray. I know Wilton does not test or guarantee that their products are gluten free so this is strictly your discretion and sensitivity level.
And because it wouldn’t be Easter without a little carrot cake, here is the recipe for my delicious carrot cake cupcakes. Many members in my Stay Gluten Free Community made them last year and they were a huge hit.

And remember that recipe I shared with you for St. Pat’s day of my attempt at a “faux” gooey butter cookie. Well here are those same cookies in a cookie pop bouquet. To get the stick to stay I made a tiny bit of glaze with a tablespoon of powdered sugar and a teaspoon of milk. Dip the tip of the stick in glaze and stick it in the cookie. Me and my son painted these cute little planters from Michael’s to put them in. It was a fun little project to put together.
There is also great news this year for those of us that are dairy free that have to pass on those cute little chocolate bunnies. Enjoy Life Brand has come out with chocolate minis that are so cute and the perfect addition to this year’s Easter basket. I found them at Whole Foods.
So as you can see, there are so many creative ways to reuse tried and true recipes without having to recipe test and worry that something will not turn out. Especially as busy moms when it seems that we are always on crunch time trying to make magic happen.
I hope this roundup makes this week less stressful for you so you can have a Happy Blessed Easter with your families.
Until next time!
