Star Bars

Ingredients
  

  • 2 1 oz bag Popped sorghum or popcorn
  • 2 cups Gluten free marshmallows I use Dandies brand
  • 2 tbsp Butter I use Earth Balance to make them dairy free
  • 1 tsp Vanilla extract
  • 2-4 tbsp Gluten free fruity cereal of choice I use Love Grown Sea Stars

Instructions
 

  • Cover a cookie sheet with a piece of parchment paper and set aside. Place star-shaped cookie cutter on tray so it is ready for use.
  • In small saucepan, melt butter
  • Add marshmallows and stir until melted
  • Add vanilla
  • Add sorghum and cereal and remove from heat
  • Stir with spatula until marshmallow and sorghum are well blended together
  • With cookie cutter on parchment paper, scoop some of the mix into the cookie cutter and with fingertips press it into all the spaces. Lift the cookie cutter and the mix should take it's shape.
  • Continue until you have used all the mix, you can also roll this mix into balls if you prefer.
  • Let cool and enjoy!

Notes

Feel free to substitute the sorghum with popcorn and let me know how you like it.
