This busy season always leaves me a little jealous of those moms that can feed their kids anything without a care in the world. You know who I am talking about, right? They grab food from anywhere, feed the family and continue about their day. But when it comes to gluten free, “grab and go” food, our options are usually limited to junk. That’s because not all pre-packaged gluten free food is good for you. And that’s why I have to tell you about our most recent discovery, Garden Lites ready made gluten free muffins that we absolutely love.
Every Friday in my (FREE) Stay Gluten Free Community on Facebook, we discuss our “Friday Finds”. Each week we take pictures and review new items that we’ve found at the grocery store. It has been so valuable to all of us in the group and I am so excited to share my “find” with you today. These delicious Garden Lites ready made gluten free muffins that….wait for it…..are made with vegetables!!!
You guys know how much I am always sneaking veggies into my kids’ meals. I think my boys are the pickiest eaters and I am always looking for new and creative ways to add veggies into our day to day lives.
I believe that when it comes to kids and veggies, we have 2 options. Start them young so that they don’t know any different and green food seems normal. Or, wait until they’re a little older, can understand the benefit of eating vegetables, and can understand a little bribery;)
Right now, I am somewhere in the middle. I am trying to add veggies and provide good food that is gluten free that also omits our other food allergens. This is why I am thrilled with our latest obsession, Garden Lites muffins!

Veggies are the first and primary ingredient in every muffin. They are gluten free, soy free, nut free, non-GMO, kosher, Good House Keeping Nutritionist approved and delicious!
This is a great way for me to get more veggies in my kids and give my older son just a little more baked egg exposure. He did not react to these muffins at all. In fact, he devoured the Carrot Berry Muffins and had no idea they had carrots until he read the box;)

With the holidays and all the cookie baking, honestly baking muffins has taken a bit of a back seat. So when I saw these ready made Garden Lites gluten free muffins, I was thrilled.
I bought 4 flavors. The blueberry oat and carrot berry immediately caught my eye. And because I LOVE all things chocolate, I had to get the banana chocolate chip and double chocolate (my fav).
I also love that they are individually wrapped so they stay fresh longer. You can set them out to defrost for 4 hours at room temperature or microwave them for 35 seconds. I appreciate the fact that I can just set one or 2 out to defrost without having to defrost the entire box at once.
But with 4 in a box, in my house they do go quickly. If one or 2 happen to be left, I just put it in the fridge for the next day. They are also good cold. I can’t begin to tell you how good the double chocolate muffins are, there is something very familiar about them that remind me of something from my childhood. They are that good, and good for you.
As a busy mom, I love that I can just grab a muffin as a healthy alternative for breakfast, snacking or the lunchbox. I also love the vegetable boost this adds to my diet. Makes me feel like I am taking better care of myself and not reaching for unhealthy alternatives.
I have always used muffins as a snack option for my boys. But sometimes I have to limit them because I don’t feel like baking. It’s so nice to know we now have options. In fact, I have taken those delicious double chocolate muffins on the go several times this week for myself. So easy.
