It’s so hard to be a busy mom and always find time to eat the best things on the go. Food restrictions make this even harder. This week as we dove into the first full week of a new school year and a new schedule of after school activities, I found myself hungry at all of the wrong times. Thank goodness for these delicious protein bites.
Now I must admit, I’m not a huge meal replacement kind of gal because I LOVE the experience of eating real food. But I do keep bars and shakes handy for those times when making something is just not possible. Our favorite shakes right now are the OWYN (only what you need) shakes and the Nugo bars.
But I see time and time again that protein bites can be very easy to make and very filling so I thought I would try them out.
I found some time to search through Pinterest for some inspiration. The recipe that caught my eye had one ingredient I hadn’t seen in any other recipe before, Rice Krispie cereal. Now I know that Rice Krispies (the brand) are not gluten free (actually they used to be labeled but now they’re not) but gluten free rice cereal does exist, you just might have to really look for it. I found a brand called One Degree that was certified gluten free from Whole Foods. Here is the original recipe I adapted.
I’m telling you, the addition of just a little bit of this cereal makes these protein bites the best you will ever have. They give them just enough crunch to make them not only delicious but actually enjoyable to eat.
The other best part about these bites is that they literally take 5-10 minutes to make. You just throw everything into a bowl, stir with a spatula and roll them. I highly recommend using chilled sun butter or nut butter. I used a new jar of sun butter that was room temperature and my bites did not roll that well. If this happens to you, just use a small ice cream scooper and put them on a parchment paper lined tray. Chill and enjoy:)
I think I’ve grabbed like 5 of them today. And with our brand new schedule of after school activities, these helped satisfy my hunger so much. And they are also sweetened with honey.
Guilt free, gluten free, and if you use sun butter, they are safe for the lunch box too!
Here’s all you need: (I made 1/2 the recipe and it was just the right amount)
- 1 cup of certified gluten free oats (I use Bob’s Red Mill)
- 1/2 cup gluten free rice (crispy) cereal
- 1/2 cup golden flaxmeal
- 1/2 cup gluten free sun butter (or peanut butter) –make sure it’s chilled
- 2 tbsp avocado oil
- 2 tsp gluten free vanilla extract
Just add all the ingredients to a bowl, mix and roll. Chill and store them in the refrigerator until gone. Unfortunately that won’t be long;)
