Pasta with Shrimp and Broccoli

I realized the other day that I share so much in my Stay Gluten Free Community and then I forget to share it here. In my home. After all, I do not own any social media platforms. But I do own this space and I need to use it better. So I am sharing this week’s “whip it up Wednesday”. This is something we do every week in the group to inspire each other with new ideas of what to eat for dinner. It’s been so great. It also forces me to make at least one new meal every week.

Now this is a rather spontaneous post so there is no pin and it will not be in the usual format but it will give you all the details to recreate the dish yourself.

 

So here it is, Pasta with Shrimp and Broccoli. I feel like it should say “con” instead of with because it would bring out the Italian in me but we’ll keep it like this for now.

Slowly I have been making my way through some old recipes I used to make with my parents while taking care of my dad who had cancer. It sort of feels nostalgic.

This was another nameless dish, so we called it pasta with shrimp and broccoli😊. And even though this combo may sound strange, you’ll just have to trust me.

I’m using frozen ingredients here because this has been on my list to make but I wasn’t sure when I was going to do it. The beauty of this is that you can always have these ingredients handy.

Here’s how to make it:In a skillet on low/med heat add 2-3 tbsp of olive oil with 1 tbsp of minced garlic. Let sizzle for about a couple of minutes but be careful and don’t burn the garlic.

Add 2 heaping cups of frozen broccoli and let it sauté until soft. Add 3-4 cut up small/med tomatoes and 1 tsp salt. Put heat on low/med and cook until tomatoes are soft and become sauce-like. Add 2 more tbsp olive oil and about 12 frozen and thawed, deveined shrimp. Let the shrimp cook completely. Remove from heat.

Boil pasta separate. Once pasta is done add to the skillet of broccoli and shrimp and mix well. Put the skillet on low heat for a few minutes while you continue to stir.

Garnish with some dairy free parmesan and Enjoy!

I used some GF pasta from Costco (brown rice and quinoa) picture in comments below. It had a stronger flavor than my preferred Jovial brand. But it wasn’t bad. It’s called GoGo Quinoa.

As you probably have guessed, I ate a lot of pasta with my parents growing up😊
