Next to my gluten free 2-ingredient chicken nugget recipe, this grain free pan fried chicken is hands down the 2nd easiest recipe I have on my blog.
It’s basically using the same concept as the nuggets. Instead of using breadcrumbs as breading, I used Siete brand nacho flavored chips.
Of course, I always give credit where credit is due so I can’t say this was my idea. Good old Instagram inspo for the win here. While others tried this with cauliflower, I decided to use chicken so I wasn’t introducing two new things at the same time to my boys.
They both were absolutely willing to try it and even liked it. #momwin
So here’s what you need:
- 1 lb of thinly sliced chicken breasts.
- 1 bag of Siete Foods Nacho flavor tortilla chips
- a bit of avocado oil for dipping and frying
- a dash of salt
I used my food processor to finely grind up the tortillas chips and since we are “raw egg” free, I first dipped my chicken in a little avocado oil (pulling down excess with my fingers). Then I dipped each chicken breast in the ground tortilla chips.
Next fry them in a skillet to your desired crispness, sprinkle with a dash of salt, serve and enjoy.
