Gluten Free Chicken Nuggets With Just 2 Ingredients

Maintaining a gluten free diet with kids can be tricky. It is important that you are able to incorporate some of those kid friendly classics like chicken nuggets. I remember searching high and low for gluten free chicken nuggets my son would love to eat. 

Since many years have passed, I am thrilled to have developed a couple of gluten free chicken nugget recipes, but this is hands down my easiest one.

Real food vs. fast food

I don’t know about you, but there are days that I envy that mom that can go through a drive through to pick up dinner for her kids. But then I remember that the quality of the food I serve is so much better and that my kids will benefit from it so much more. This definitely motivates me to do what I do.

This recipe could actually pass for “fast food” chicken nuggets. In fact, when I took my first bite of these gluten free chicken nuggets, I was shocked at how close they tasted to actual fast food.

The other thing I love about these nuggets is that you can also add hidden vegetables. I recently mixed in some spaghetti squash and my 2 year old gobbled them up so fast. If you try this, chose a vegetable that does not have a robust taste. My usual go-to’s are spaghetti squash and zucchini, because they are so mild and easily hidden.

Putting it all together

To make these delicious nuggets first you will need to choose a brand of gluten free potato chips. We love Kettle brand sea salt kettle chips. Then fill your blender about halfway and grind. I usually add 1/3 of a bag at a time.

Place the blended chips on a plate and get ready to bread the chicken

Divide the ground chicken into portions, shape into nuggets and cover both sides with this breading. Add about 2 tbsp of canola oil to a skillet and fry the nuggets. Flip and cook them until golden brown.

I hope your kiddos love these as much as mine do. Serve with some gluten free ketchup and not only will you have yourself a “fast food” meal, you will also have a meal made fast.

If you decide to add some veggies. You will add them to the ground chicken before dipping them in the breading.

2 Ingredient Gluten Free Chicken Nuggets

Gluten free chicken nuggets kids will love because of the taste and moms will love because they are so easy to make.
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Servings 4 people

Ingredients
  

  • 1 lb ground chicken I use 1/2 lb ground breast and 1/2 lb ground thigh
  • 1 bag gf potato chips

Instructions
 

  • Place chips in a blender 1/3 bag at a time and grind
  • Place the blended chips on a plate
  • Portion the ground chicken and shape into nuggets
  • Cover the nuggets with chip coating and get ready for frying
  • Add just enough canola oil to a skillet to coat the bottom, roughly about 2 tbsp. Heat the oil for a minute or two before adding the chicken
  • Begin frying the nuggets and turning them until they are golden on both sides
  • Place on a paper towel covered plate to drain excess oil
  • Serve and enjoy!

Notes

You can also make chicken patties instead of nuggets. This recipe will make about 5 patties. Place one in the middle of your favorite gluten free bun and make the perfect chicken sandwich.
It is also ok to use a lb. of ground chicken without the breast. Adding the breast reduces the fat in the meal. Grocery stores sell 1 lb. pre-packages, but make sure to read the label regarding any "solutions" that have been added to the chicken. This can be a red flag for hidden gluten.
