I haven’t had a calzone in years. My dad made me my very first calzone stuffed with Italian sausage, ricotta cheese, and mozzarella cheese. I can still see it. But come to think of it, was it a calzone or a stromboli? Do you know the difference? Regardless, with my gluten free pizza crust recipe making your very own gluten free calzones are now possible.

But I never get the time to update things on my blog. Probably the most important place for me to share what I do. But this is a season of life for me that requires my attention and focus on my young children. I just have to get better at accepting that not everything will be perfect right now.
Soon my youngest will be in school and I think I will cry my eyes out when that happens. I have absolutely loved motherhood the second time around. I’m older and wiser and can appreciate so many more of the little things.
There have been a lot of changes in my life lately. A lot of growing pains for all of us. Do you ever have a season of your life that just keeps you on your toes? That is the season I am in right now, and I really need things to calm down so that I can put both feet on the ground and relax.
But the most memorable thing that happened to me last week is that I stopped nursing my youngest son. He is 2 and 1/2 and we bonded so much longer than I anticipated, but it was time. Still, I wasn’t prepared for what that would also be saying good bye too. The last thing that made my toddler a baby. The last piece of my maternity time. Needless to say it has been a whirlwind of emotions.
I hope you don’t mind me sharing all of this with you, but I really don’t know that I share a lot of “me”. I am a real gluten free mom with kids that have food allergies, that has daily struggles just like you. Gluten free might look easy, but it’s just one additional thing to think about daily. What am I going to feed me and my kids today?
Our subject matter lends itself to having real, deeper relationships. It is because of our restrictions and resiliance to find new ways to eat that we are able to over come and be stronger better versions of ourselves.

A couple of things I am currently working on is revamping my pie crust recipe and reviewing all of the places you wouldn’t expect to find gluten in your diet. From time to time, we need a reminder and some updated information. This is probably another one of those very important questions I get asked quite often. So stay tuned for these to come.

My Method
To make a calzone you will first need to follow my gluten free pizza crust recipe that will yield you 2 pizza doughs. Simply work the bottom dough on the prepared pizza tray as you would to make a pizza (video in recipe post), then work the second crust the same way on a prepared piece of parchment paper.
Top the bottom crust as you would to make a pizza, adding another layer of sauce and cheese over the top.
Then with the parchment paper, flip the 2nd crust over the top and fold in the edges all around the pizza pie. Your finished calzone should look like the picture below.
Cook at 425 for 20 minutes. Lightly brush a bit of olive oil over the top to help bring out some color and cook an additional 5-7 minutes. Let cool, cut, serve and enjoy!
