Gluten Free BBQ Chicken Tostada

In an effort to make sure I am sharing more here than on social media, I thought I would share this quick and easy dinner. And when I say easy, I mean really, you hardly have to do a thing.

Spring is now in full swing and I know being in the kitchen is so hard. I would rather be outside playing for sure. So here are some gluten free BBQ chicken tostadas you can make real quick on those nights you just don’t feel like cooking.

These tostadas are messy but so good. I made them by simply putting chicken and BBQ sauce in the crockpot. I let it cook for 6 hours on low. This will make the chicken pull apart so nicely.

Have you found a favorite gluten free BBQ sauce? If you haven’t you need to try some Bone Suckin’ Sauce. It is the BEST I have ever had, and I am picky about my sauces. I buy it at Whole Foods and use one jar per pound of chicken.

I used the Siete Foods brand hard taco shells, but instead of heating them at 400 for 2 minutes, I heat them for 1 minute and flatten them after about 40 seconds. Be very careful doing this because these shells are pretty delicate and you won’t want them to break. But even if they do, as you can see that only means the tostada will already be cut.

So in a nut shell, I cook my gluten free BBQ chicken, heat my shells then I top them with chicken, Daiya dairy free cheddar shreds, heat them on a cookie sheet just to melt the cheese, then add anything else you desire. In the picture I topped them with some Tofutti  brand sour cream. Yum!
