What’s the meal you struggle with the most? For me, it’s always been breakfast. But not just a gluten free breakfast, I’ve always struggled with breakfast. Pre gluten-free days I would eat a bagel or crackers with peanut butter, and feel miserable after. Every single morning. And now as a busy mom, I was still struggling to find that easy, healthy gluten free breakfast, until now! Enter Garden Lites veggie cakes. You’re going to want to know about these, trust me.
I am a huge veggie lover, but as you know, they are a hard sell for my kids. Recently I posted about the Garden Lites muffins that have helped me get more veggies into their diets. I am thrilled that even with his other food allergies he was able to eat these safely.
For those of you who have kids with egg allergies that can only have baked egg, these muffins are great. I know first hand that navigating food allergies along with the gluten intolerance is so hard, but I have always tried to give my kids the healthiest “normal” food they could possibly have under these circumstances.
But what about me? Being a busy mom I tend to survive on whatever my kids leave on their plates. It’s so hard to make them breakfast, pack their snack and lunch AND make my own breakfast as well. Now, I don’t have too.
These Garden Lites veggie cakes absolutely perfect. They are frozen and individually wrapped so that you can just grab what you need and pop them in the toaster or conventional oven (that’s what I do) for 18 minutes. They are also microwaveable. And they are so good!!
They are packed with veggies and remind me of a quiche. And I didn’t have to make them myself;). They are gluten free, nut free, non GMO, Good Housekeeping Nutritionist Approved. The superfood veggies cakes (my favorite) are also dairy free.

These veggie cakes have helped me get my day started in the right way and I am so thankful.
These make a great option as a side dish as well. Recently I made our favorite chicken tenders (as shown above) and used these as an easy side. It was so nice not to have to prepare one more thing.
I happened to have one leftover, so I reheated it the next day and it was just as good.
