Crockpot Taco Night

I absolutely love Taco Tuesdays. It’s the one day of the week where you can eat the same thing but in a different way every single time. I love it even more when you add a crockpot into the mix to make it a crockpot taco night.

A while back I admitted that I usually share my baked goods here on my blog. We certainly don’t eat cookies and cupcakes daily.

But when I started this blog my goal was to recreate the food we love and miss. Not to introduce you to foods you have never heard of before. Being a mom to allergy kids, I want them to have some sense of normal. If all the kids at a party are eating chips, I don’t want him to be the only one eating broccoli. My point is that I don’t want my kids be different anymore than they already have to be.

So let me take a minute and tell you why taco night is such a treat for us. My oldest son is also allergic to corn. Now, what is the number one ingredient that makes up a gluten free tortilla? Yep, you guessed it, corn! So for years until I developed my very own gluten free tortilla, taco night did not exist at our house.

When I make beef tacos, I usually cook my beef with Spicely Organics taco seasoning in a skillet. Seems easy enough right? But sometimes the beef is clumpy and not as tender as I would like. So I decided to make the taco beef cook in the crockpot and I absolutely loved the results and so did my family.

Here is what you need to make taco beef in the crockpot:

My Ingredients

2 lbs fresh Ground Beef
1.5 cups cut up Whole Peeled Tomatoes (my kids do not like chunks)
10 frozen Pearl Onions (I love keeping frozen onions in the freezer, I always have them in a pinch)
1 Tbsp Sugar
2 tsp Sea Salt
2 tsp Garic Powder
1 tsp Ground Cumin
1 tsp Chili Powder
1 tsp Smoked Paprika
1/2 tsp Black Pepper
1/4 tsp Crushed Red Pepper

My Method

Add all ingredients to your crockpot, stir well and cook on low for 6 hours. Stir every once in a while. When it’s done, there will be juice. I used a slotted spoon to collect the beef to make sure my tacos were not juicy. Add the beef to the tortillas.

You can now turn your taco Tuesdays into crockpot taco Tuesdays with this simple easy recipe. This beef can be also used atop my favorite Siete brand tortilla chips. Entertaining your friends has never been so easy.

I am going to be better about sharing meals here as well. Seriously if I would just right down what we eat all week I would have loads of recipes. But it seems that every time I put a pen in my hand someone’s little fingers grab it from me. But I will still keep trying.
