Arancini (Italian Rice Balls)

If you want to know what I’m making for New Year’s Eve, THIS IS IT! I’m making Arancini (Italian Rice Balls). It’s another Italian tradition that went to the way side after my gluten free journey began and when the thought of frying one more thing seemed so daunting. This was WAY before the days of air fryers and WAY before I adapted our favorite family recipe to be able to be made in an air fryer. For me, this was revolutionary, because this was a part of my childhood I thought I would never have back. 

Want to know the other thing we had every year growing up? My mom’s famous punch. And if you need a fun drink this new years this is it. You’ll need to make it a day or two ahead of time so it has time to freeze. The amounts are subjective because there was never a precise measurement of anything, I would just watch her poor it all together and stir. Below is what I use to make it. 

Here’s all you need:

  • 1 bottle of GF vodka (Tito’s is good if you can tolerate corn, or Chopin makes potato vodka)
  • 1 big bottle of cranberry juice
  • 1- 2 liter bottle of sprite (she used 7-up). Use what you are comfortable with. 
  • 1 can of frozen lemon concentrate
Be sure and check labels. Then in a gigantic bowl add 3/4 bottle of vodka, almost all the cranberry juice, the whole can of lemon concentrate and about 1 – 1 1/2 liters of sprite. Freeze it in freezer safe containers leaving room for it to expand with the lid on until you are ready to serve it. When you are serving it, add more sprite if necessary. 

So here you go! 2 delicious things for New Years Eve. We will probably go see a movie and then get out our game jar and enjoying a game night together. I hope you all get to do something fun and safe too.
