I have thought and thought of so many ways to get my kids to eat their veggies. I’ve created the Broccoli Chicken Patty and the Turkey Meatball Patty, I have hidden zucchini in my muffins, but it just isn’t enough. After these past couple of weeks where everyone was sick, it came to me. I was determined. I was talking to 2 moms at a school gathering and I declared (I’m totally serious) that I was going to put zucchini and cauliflower in my kid’s tacos that night. So we had “hidden” veggie stuffed tacos for dinner that night.
I am so tired of making vegetable sides and wasting them because my kids won’t eat them. It’s a waste of food and money. Literally, if they are not hidden in something, it will not get eaten. So I chose zucchini and cauliflower because these are the 2 vegetables that have the least distinct flavor
All you need:
- 3 inches of an organic zucchini (grated)
- 2 tablespoons riced cauliflower
- splash of fresh squeezed lemon
I don’t recommend buying a whole head of cauliflower and ricing it yourself for such a little bit. These days, you can totally buy it frozen or already riced in the produce section of your grocery store. I put both in the blender to puree. Then I took my taco seasoning mixed with water (the amount called for) and stirred in the veggies. In hindsight, next time I think I will add the veggies to the taco/water mix and then put it all in the blender to puree.
Then I add that mixture to my ground beef and mix it well. It might seem like you are about ready to make meatballs (not a bad idea) but you will add the very well mixed beef to the skillet and cook thoroughly. I would use the leanest grass fed beef you can find so that you do not have access grease. Keep in mind that you are adding moisture to this beef so if the mixture pools as it cooks do not panic. Just make sure you cook it long enough that 90% of the juice/sauce is cooked into the beef.
It’s that simple. If I think of it, I will add more how to pictures to this post later but I was so excited I had to document and share it asap. Last week, I also made this beef and used it to top off Siete tortilla chips. I melted some Daiya (cutting board collection) cheddar and I have never seen my kids devour them so fast. And the best part is that they had no idea!!
